100% acorn-fed Iberian pork shoulder. "Pata Negra" (highest quality R.D. 4/2014)
It comes from animals that are over 18 months old and 160 kilos in weight. One they have gone through the salting period, the shoulders are transferred first to the drying sheds and finally to the cellars. It takes a total of 24 months to cure and mature the hams, during which time they undergo natural chemical changes and the characteristic aromatic compounds are formed. The wheight of the meat also diminishes 35% from when fresh.
"pata Negra", a synonym of genetic authenticity, and "caña fina" are two hallmarks of our 100% Iberian acorn-fed shoulders. Among their many attributes, the "flavour" (a combination of smell, taste and texture), the shiny lean meat and the smooth flow of the fat are unmistakable traits that generate a series of sensorial perceptions when the ham is tasted, and which enhanceits unparalleled bouquet.
For some "seasoned tasters", the organoleptic properties of the shoulder are very similar, and even superior to that of ham.
